Raspberry Shortbread Bars

This is the best recipe I've tried inwards a long time. I constitute it over on "The Domestic Rebel"....my picky-picky hubby is inwards dear amongst this sweetness treat!!!

The bottom crust is a deliciously TENDER shortbread, together with then in that place is a unproblematic layer of raspberry jam, nuts together with to a greater extent than shortbread pieces on top. It couldn't live easier!!! The master copy recipe didn't bring a frosting, but I intend every cookie bar needs a drizzle, don't you? (My tweaks to this recipe are inwards blue).

3/4 loving cup butter (room temperature)
1/2 loving cup powdered sugar
1   teaspoon vanilla extract
1/2 teaspoon almond  extract
1 1/2 cups flour
3/4 loving cup raspberry jam (I used 1/2 cup)
1 loving cup slivered almonds (I used 3/4 loving cup of toasted pecans, chopped)

Preheat oven to 350°F together with work an 8"x 8" pan amongst foil, spray the foil amongst cooking spray. (I lined an 8" x 8" baking pan amongst parchment newspaper together with used NO spray. Leave the parchment ends long, hence y'all tin view onto them to elevator the bars out of the pan subsequently they are cooked together with cooled.)

In a large bowl (I used my stand upward mixer) beat the room temperature butter, powdered saccharide together with extracts until creamy (about ii minutes).

Add the flour together with crunch until it all comes together. The dough may live a petty crumbly but that's OK. (Dough comes together perfectly using a stand upward mixer....a smaller mixer mightiness piece of work out it a petty crumbly).

Remove 1/2 loving cup of this dough, twine it inwards plastic together with freeze for 10 minutes. (I patted the 1/2 loving cup reserved dough into a sparse disk together with and then position it inwards the freezer)

Pat the residue of the dough onto the foil (or parchment) lined pan, inwards an fifty-fifty layer. Top amongst 1/2 loving cup of slivered almonds together with jam, spreading almost to border of dough. I position toasted pecans UNDER the layer of jam.

Crumble the remaining dough on tumble out together with goal amongst remaining slivered almonds. (I cutting upward the frozen dough into rattling sparse slivers amongst my pastry cutter together with sprinkled evenly over the jam layer, together with then I topped that layer amongst the terminal 1/4 loving cup toasted chopped pecans.)

Bake 45 to 50 minutes at 350°F or until the tumble out is low-cal golden brownish together with centre is set. Cool completely. My electrical oven took precisely 45 minutes to larn overnice together with golden on top. The master copy recipe said "bake until centre is set", but in that place is goose egg inwards the centre to 'set' inwards this recipe, hence I would ignore that idea.

The master copy recipe didn't bring a frosting, but I regard it needed some, hence I simply mixed a petty melted butter amongst some powdered saccharide together with vanilla together with a yoke tablespoons of milk (sorry, I never mensurate my frosting's). Just mix it good together with drizzle over the cooked bars....you can't become wrong.

Cool completely earlier cutting into squares.
