Coconut Cream Pudding

This is a wonderful "last infinitesimal dessert" that uses every solar daytime pantry items in addition to holds upward real good inwards the refrigerator for a distich of days, if necessitate be. The wonderfully sweet, rich (but mellow) kokosnoot flavour comes from adding the kokosnoot during the commencement stages of cooking this pudding.  Even Picky-picky wife loves this dessert !!

4 tablespoons granulated sugar
2 tablespoons corn starch
1/4 teaspoon salt
2 cups milk ( 2% is ok)
1/2 cup sweetened shredded coconut
2 egg YOLKS (just the yolks)
1 tablespoon butter
1 teaspoon vanilla extract

In a heavy saucepan, mix the sugar, cornstarch, tabular array salt , kokosnoot in addition to milk. Cook in addition to stir over medium rut until the mixture gets THICK in addition to bubbly. Turn rut downwardly a footling (to medium simmer) and laid (and stir) for two minutes. In the meantime, set the two egg yolks (yolks only) inwards a minor bowl in addition to laid aside.
