No Yell Meringue

We honey lemon meringue pie, but since nosotros are "empty nesters" it takes us several days to consume the pie, together with yesteryear thence my meringue starts to "weep" a clear liquid that makes everything.......well, nosotros throw it away when that happens.

Recently, I flora a recipe online for a "No Weep Meringue" together with it genuinely is, only that, it doesn't weep!! Not solely does it gustation excellent, but the pie has been inwards the refrigerator for iii days at in 1 lawsuit together with non a DROP of liquid has appeared!! 

For the life of me I can't yell upward where I flora this recipe, thence I apologize to the master copy author. Where has this recipe been all my life!?!?!?


 

NO WEEP MERINGUE

1 tablespoon cornstarch
1/2 loving cup + ii tablespoons mutual frigidness water

Bring this to a boil (whisking all the time) together with laid until it gets rattling thick.  Remove from estrus together with laid aside to cool to lukewarm.

In a large drinking glass or stainless steel bowl (NO PLASTIC) musical rhythm out iii egg whites until they are thick together with foamy (they shouldn't concur a peak yet).

With mixer on high, add together vi tablespoons saccharide (one tablespoon at a time) beating good inwards betwixt each addition. Add 1 teaspoon vanilla extract + a pinch of salt and musical rhythm out until stiff together with glossy.

With mixer running, add together the lukewarm cornstarch mixture together with musical rhythm out on HIGH for 3-4 minutes.

Spread on filled together with cooled 9" lemon pie.  Bake at 350° for nearly ten minutes or until meringue peaks induce to plough golden.

Keep finished pie inwards fridge.
